Salted Butterfinger Peanut Butter Cookies

Salted Butterfinger Peanut Butter Cookies | Little Kitchen, Big Bites

Holy cow, these are good cookies.  They were born out of a nice gesture from my mom.  She brought me a butterfinger bar after we brought the baby home from the hospital.  Because they’re my favorites and I was exhausted and she’s the best mom ever and it’s a good snack to have sitting in your pantry when you’re up at 2 am {I can only hope to be as good a mom to this little as she is to me!}.

So I was looking at the butterfinger bar one night {right before demolishing it} and I thought *how good would it be to make this into a cookie?*  And I made a mental note {and a physical note on my iPhone because I never remember anything on limited sleep} and moved on.  A few days later at the store with baby, I shoved some butterfingers and some peanut butter in my cart and it was on.

These cookies were the best.  They’re soft and chewy with chunks of crunchy butterfinger and a bit of a salty kick.  Because you know I love me some sweet and salty and I had to throw a little sea salt on top.

Sweets for the Sweet

Happy Valentines Day, my friends!

It’s that good ol’ Hallmark holiday where those who are happily in love are expected to do something romantic, and single people curse all of the rest of us.  As I mentioned before, Hubby and I pretty much ignore the holiday after eight years.

But just in case you want to whip up something sweet for your sweetie, I thought I’d put together a little dessert post with some ideas that you can easily throw together tonight.  Because everyone knows that the way to a man’s heart is through his stomach.  Have a lovely, love filled day!

Oreo Peanut Butter Brownie Cups

I haven’t found much in the world that can’t be solved by chocolate and peanut butter.
Let me share a very simple equation that I’ve discovered.

Oreos + Peanut Butter + Boxed Brownie Mix = The Easiest, Yummiest Dessert Ever

This one is so easy and so impressive at the same time.  You can throw it together quickly and it’s great to bring to the office or a friend’s place.  And they’re perfectly pre-portioned rich, gooey goodness to share with family and friends.  My only warning is that you shouldn’t keep them in your home.  That will be very dangerous for your diet.

You can find the original recipe here.

Oreo Peanut Butter Brownie Cups

Recipe type: Dessert
Prep time:
Cook time:
Total time:
Serves: 16

Ingredients
  • 32 Oreos {a little less than one pack}
  • ½ a jar of creamy peanut butter
  • 1 box of brownie mix {I love Ghirardelli Double Chocolate}**
  • Cupcake liners
  • **1 egg + ¼ cup water + ⅓ cup vegetable oil or whatever your brownie mix requires
Instructions
  1. Preheat your oven to 350 degrees
  2. Put cupcake lines in your pan
  3. Grab one Oreo. Spread about 1 tsp of peanut butter on top of it and pop another Oreo on top so you've made a little sandwich.
  4. Spread another teaspoon or so of peanut butter on top of the sandwich and put the sandwich in the cupcake liner. Repeat with all Oreos.
  5. Whip up the brownie mix per the instructions on the box. Spoon about 1 tablespoon of mix on top of each sandwich. It should run over the top and down the sides of the sandwich. If you have any extra mix, just equally distribute between the cups.
  6. Pop the cups in the oven for about 18 minutes.
  7. Remove and let cool completely before diving in.
