On our first wedding anniversary, we went all out.  We stayed in the hotel that we got married at, walked the grounds, took photos, and went to the fancy restaurant.  It was romantic and fun and we still felt like newlyweds.

Fast forward three years to our four year anniversary.  I still feel like a newlywed.  I still get butterflies when my husband walks through the door.  But this year we had a special little treat that made it a touch different.  A little treat who is starting to figure out how to crawl, who smiles at everyone, and who wants to sit at the table with us and munch on her portion of asparagus too.  So a romantic escape to a hotel and a fancy restaurant was not in the cards on a Thursday night thank you very much.  But I’m not going to lie, this anniversary was the best one yet because we spent it with our little peanut.  And with this fabulous recipe that I whipped up for the occasion.  Cooking on your anniversary is totally glamorous, right?

With Valentines Day coming up, this could be the perfect easy, yet decadent dish to whip up for your honey.  I’m deeming this one “semi-homemade” because I really could have made the gnocchi by hand instead of buying a pack from Trader Joe’s and it would have been ridiculous.  But I was lazy and had a baby with the sniffles so I didn’t.  And instead of being an all afternoon affair, it was on the table in 30 minutes with a homemade sauce that was so rich and delicious that I could have slurped the rest out of my bowl.

Gnocchi and Asparagus with Brown Butter Sage Sauce

Ingredients
  • 1 package pre made gnocchi {I used the Trader Joe's brand}, cooked according to the package
  • 1 lb asparagus, cleaned, tips trimmed, and cut into bite sized pieces
  • ¼ onion, chopped
  • 1 t olive oil
  • 1 T preminced garlic
  • 1 T brown sugar
  • 1 stick {1/2 cup} butter
  • 2 T + 1 T sage, chiffonaded
  • 1 t + 1 t black pepper
  • ½ t + 1 t salt
  • ¼ cup milk
  • ½ cup Parmesan cheese, grated
Instructions
  1. Cook gnocchi according to the package instructions.
  2. While it is cooking, melt butter in a small sauce pan over medium high heat
  3. Once it is melted, add 2 T sage, 1 t black pepper and ½ t salt
  4. Continue to stir frequently for about 5 minutes until butter takes on a brown hue
  5. Stir in milk and remove from heat and set aside
  6. For the asparagus, heat olive oil in large skillet over medium heat
  7. Add onion and garlic and cook for 2-3 minutes
  8. Stir in brown sugar, 1 t salt, and 1 t pepper and cook for an additional 2-3 minutes
  9. Stir in asparagus and 1 T sage and cook for an additional 5 minutes
  10. Stir in brown butter sauce, cooked gnocchi and Parmesan cheese
  11. Allow to combine for 2-4 minutes
  12. Serve immediately and garnish with additional sage and Parmesan cheese
