This recipe is seriously too easy for words.  It’s a “throw it all in and watch it cook” recipe.  Which is good, because with a two month old and my supply of freezer meals finally coming to an end, I’ve found it increasingly difficult to make it to the market and to remember to even put something in the slow cooker in the morning.

I realized that I should let you guys know that, although my recipes always have you cook on the “low” setting, you can cook on the “high” setting and get it done in about half the time.  My rule of thumb is to cook on high for half the time plus an extra hour.  Which works when it’s 1pm and you realize you haven’t put anything on for dinner, nor do you want to make plain ol’ pasta for the third night in a row.

Anyway, on top of being super easy, this one’s pretty healthy too.  I’ve finally resolved to lose the baby weight that’s still hanging around my tummy, so we may have some healthier recipes coming up in the future.  Maybe.  These resolutions often only last for a day or two and then I’m back to chimichangas and other fried nonsense.  Or pretzel thins dipped in marshmallow fluff.  Those who follow me on instagram {i’m rachelh0123} may have seen that gem.  The ironic part of that one is that I bought the pretzel thins because they would be a healthier snack than getting cheez-its or something along those lines.  Oh well.

Slow Cooker Cilantro Lime Chicken Soup

Ingredients
  • 4 boneless skinless chicken breasts
  • ¾ cup chopped cilantro, plus more to garnish
  • ½ red onion, chopped
  • 2 - 14 oz cans corn, drained
  • 1 - 14 oz can Mexican style black beans, drained
  • 3 T lime juice
  • 1 T preminced garlic
  • 1 T cumin
  • 1 cup salsa
  • 4 cups chicken broth
  • Salt and pepper to taste
Instructions
  1. Combine all ingredients in the slow cooker.
  2. Cook for 8 - 10 hours on low.
  3. Shred chicken with two forks.
  4. Garnish with cilantro.

  1. I make this soup about 2-3 times a month. It is very good. I use fresh corn when in season. I also use a can of jalapeño refried beans to thicken the broth and it adds a nice level of spiciness to the soup.
    I felt like telling you this.
