Is anyone else totally shocked that it’s mid-July already?  Maybe it’s the fact that I’ve got this tiny little baby girl who is literally growing like a weed in front of my eyes {she’s in the 90th percentile for everything and I’ve been told that she’s out of the newborn stage {tear} and bigger than some of the four month olds in our new play group so she’s not really so *tiny* anymore!}, but the days seem to be flying by.  We’re exploring the world together…and by that I mean the backyard, Target, and the occasional playgroup or lunch date…and I’m already teaching her how to cook…and by that I mean talking through things as she sleeps in her swing and I throw ingredients in the slow cooker.  Poor girl isn’t going to understand what a stove is…

Ok anyway, so I blogged a similar recipe quite a while ago, but I wanted to share it again because I make it all. the. time. And I’ve tweaked it a bit to perfect it and I realized that I needed to get some better photos and a better recipe up {the photo on the old blog was an epic fail}.

Spinach and artichoke dip is pretty much my favorite appetizer ever. If I’m ordering an app, it’s going to be this. So I’ve tried a lot of them. I also love to bring it to parties because, let’s be honest, who doesn’t love a good cheesy dip? No one. But I got sick of baking it in the hot oven and sweating in the kitchen when I should be putting my makeup on and getting ready for the party.

So, of course, I decided to make it in the slow cooker. Instead of sweating it out, wondering when I should put it in to have it ready just when we’re ready to leave or guests are ready to come over, I put it in in the morning and forget about it. You know slow cooker is my style. I also added some things here and there to give it a little more of a kick. Because spicy is the way to go.

Oh and did I mention this is literally the easiest recipe on the face of the planet? It’s one of those *throw everything in the crock pot, stir it, and you’re done* recipes. After a few hours of melding together, you literally scoop it into a dish, serve it with some chips and call it a day.

Slow Cooker Spicy Spinach & Artichoke Dip

  • 2 cups grated mozzarella
  • 1 cup grated parmesan
  • 20 oz cream cheese, softened
  • 2 - 16 oz boxes frozen spinach
  • 1 - 14 oz can quartered artichoke hearts
  • 1 jalapeño pepper, seeded and diced
  • 1½ T balsamic vinegar
  • 1½ T preminced garlic
  • 1 T salt
  • 1 t crushed red pepper flakes
  • 1 t chili powder
  • 1 t black pepper
  1. Combine all ingredients in the slow cooker. Stir to combine
  2. Cook for 3-4 hours on high or 6-8 hours on low.
  3. Serve hot with crusty bread or chips.
