Holy cow, these are good cookies.  They were born out of a nice gesture from my mom.  She brought me a butterfinger bar after we brought the baby home from the hospital.  Because they’re my favorites and I was exhausted and she’s the best mom ever and it’s a good snack to have sitting in your pantry when you’re up at 2 am {I can only hope to be as good a mom to this little as she is to me!}.

So I was looking at the butterfinger bar one night {right before demolishing it} and I thought *how good would it be to make this into a cookie?*  And I made a mental note {and a physical note on my iPhone because I never remember anything on limited sleep} and moved on.  A few days later at the store with baby, I shoved some butterfingers and some peanut butter in my cart and it was on.

These cookies were the best.  They’re soft and chewy with chunks of crunchy butterfinger and a bit of a salty kick.  Because you know I love me some sweet and salty and I had to throw a little sea salt on top.

Salted Butterfinger Peanut Butter Cookies

Ingredients
  • ½ cup butter, room temperature
  • ½ cup sugar
  • ½ cup packed brown sugar
  • ½ cup peanut butter
  • 1 egg
  • 1¼ cup flour
  • ¾ t baking soda
  • ½ t baking powder
  • ¼ t salt
  • 3 butterfingers, crushed
  • Sea salt to top
Instructions
  1. Preheat oven to 375 degrees
  2. Beat butter until creamy
  3. Beat in brown and white sugar, then peanut butter and 1 egg
  4. In a separate bowl, mix together flour, baking soda, baking powder, crushed butterfingers and salt.
  5. Stir dry ingredients into wet ingredients.
  6. Scoop about 2 T cookies onto an ungreased baking sheet
  7. Bake for 8 minutes
  8. Remove and top with sea salt
  9. Bake for an additional 2-3 minutes, until golden brown
  10. Remove from oven and let cool
