This post goes out to my incredible Hubby.  He’s back at work after paternity leave and let me tell you, he is just the most amazing daddy in the whole world.  He’s been super hands on, helping with diapers, burping, and constantly holding, talking to and loving our baby.  It’s been tough managing everything without him in the last few days, but I’m loving the time with my sweet baby girl.

Russian chicken is one of my hubby’s very favorite recipes of all time.  It’s one of the first recipes that I ever made and blogged about wayyyyy back in the day {check out those lovely camera phone pictures} and one of the first recipes that I ever adapted for the slow cooker.  And there is just something about marinating chicken in saucy goodness for over eight hours that can never go wrong in our household.  It’s a quick, easy dinner for two that never fails.

I would be remiss to not include a shout out to my MIL, who gave me the original recipe when I was first teaching myself how to cook.  At the time, between my new obsession with Top Chef and my new obsession for her son {now that I wrote that it sounds a little creepy, but I’m not taking it back.  I’m pretty obsessed with my Hubby.  You would be too.  He’s awesome}, I decided that I wanted to learn to cook his favorites and she gladly shared them.

Slow Cooker Russian Chicken

Ingredients
  • 2 boneless, skinless chicken breasts
  • 1 bottle of Russian salad dressing
  • 1 package of Lipton onion soup dry mix
  • ½ cup chicken broth
  • 1 cup dry white rice
Instructions
  1. Place chicken, dressing, soup mix, and chicken broth in the slow cooker and stir to combine.
  2. Cook on low for 7-9 hours.
  3. Come back and shred chicken.
  4. Add white rice.
  5. Turn the slow cooker to high and cook for an additional 30 minutes to an hour, until it has absorbed the liquid and is fluffy.
  6. Serve hot.
