Hubby and I are so blessed to have so many wonderful people in our lives, and we’ve really seen this through this pregnancy.  There are so many people who are so full of love and support for us and our impending bundle of joy, and who have shown us such generosity throughout the process.

So what does this girl do to say thank you?  I bake of course.  And for these, which were a thank you to Hubby’s office for throwing us a delightful shower, I had to come up with something different.  Something full of chocolatey, peanut buttery, candy nonsense to show them how full of happiness my heart was after meeting all of them and hearing all of their kind words about my husband, our baby and our future.

But of course, we’re not talking anything too complicated, not because I wouldn’t be willing to do it for them, but because I still don’t consider myself much of an improvisational baker.  So I stuck with something easy {the peanut butter cookie portion of the recipe is directly from SimplyRecipes and can be found here}.  And they turned out pretty frickin incredibly delicious if I do say so myself.  And I do.

Please note that the recipe below is for a huge batch.  It made probably 30 – 40 bars in the biggest pyrex that I have.  You could easily cut the cookie recipe in half, use only one box of brownie mix, and less peanut butter cups and toppings and bake this in a 9×9 pan for around 45 minutes with the same effect for a smaller group.

  • ½ cup sugar
  • ½ cup packed brown sugar
  • ½ cup butter, room temperature
  • ½ cup peanut butter
  • 4 eggs {2 for cookies, 2 for brownies}
  • 1¼ cup flour
  • ¾ t baking soda
  • ½ t baking powder
  • ¼ t salt
  • 2 boxes Ghirardelli Double Chocolate Brownie Mix
  • ⅔ cup vegetable oil for brownie mix
  • 32 snack sized peanut butter cups {~28 for pan, ~4 chopped to top}
  • ¼ cup peanuts, chopped
  • ¼ cup chocolate chips, chopped
  1. Preheat oven to 375 degrees
  2. Beat butter until creamy
  3. Beat in brown and white sugar, then peanut butter and 1 egg
  4. In a separate bowl, mix together flour, baking soda, baking powder, and salt.
  5. Stir dry ingredients into wet ingredients.
  6. Press dough into the bottom of a greased or parchment covered 9x13 baking pan
  7. Place whole peanut butter cups on top of the peanut butter cookie mixture to cover the pan
  8. Chop remaining peanut butter cups coarsely and set aside
  9. Mix the two boxes of brownie mix as indicated on the box
  10. Pour brownie mix over peanut butter cups and cookie dough.
  11. Bake for about 1 hour
  12. Pull the bars out and sprinkle with chopped peanut butter cups, peanuts, and chocolate chips
  13. Bake for another 10 - 15 minutes, or until brownies appear mostly cooked on the inside
  14. Cool entirely, then cut and serve.
