I got into the groove for St. Patrick’s day a little late.  I mean to post this last week, and then work got in the way.  I meant to make this and have it up in time to share it, but it just didn’t get there.  Nor did I really celebrate the holiday.  So I encourage you to hit the St. Patty’s sale section, grab some green beer, and celebrate all over again this weekend.  Or, just make this for dinner any chilly evening.  This was one of the first meals cooked in our new home and there was something incredibly comforting about it.

There’s nothing better than a potato soup.  They’re always thick and yummy and satisfying and they usually involve some sort of cheesey goodness.  And what better to do than dunk some crusty bread in them and call it a meal.  I can’t even handle the carb on carb action there.

Slow Cooker Cheddar Potato & Asparagus Soup

Ingredients
  • 1 bag {~1 lb, 8 oz} frozen roasted redskin potatoes
  • 1 lb asparagus, ends trimmed and chopped
  • 1 small white onion, chopped
  • 6 green onions, chopped, plus more to garnish
  • 1 {48 oz} box vegetable broth
  • 1 T salt
  • 1 t black pepper
  • 1 t dried basil
  • 1 t savory seasoning
  • 1½ - 2 cups skim milk
  • 2 cups shredded cheddar cheese, plus more to garnish
Instructions
  1. Place potatoes, asparagus, onion, green onions, broth, and spices in the slow cooker. Mix to combine.
  2. Turn the slow cooker to low and cook for 8 - 10 hours.
  3. Come back and add milk {decide how much to add based on desired thickness} and cheese.
  4. Blend thoroughly with an immersion blender, or transfer to a blender to blend.
  5. Let cook for another 30 minutes.
  6. Serve hot and garnish with cheese and green onions.

  2. LOVE this, saw it first two weeks ago, have made it twice now, both times using twice as much asparagus. This time i used 3 big leeks in place of the 6 onions and liked it even better. Also, I can not eat dairy so i used Daiya shredded cheddar and hemp milk. This soup is versatile and hearty.
