Ok girlfriend over at High Heels & Grills whipped up this recipe called 8 Can Taco Soup.  It could not be easier.  And for once, somehow, I took a very easy recipe and made it slightly more complicated.  Wtf, right?

But it was still so easy.  Like sinfully easy.  Like open a few cans, dump them in, and go easy.  And super flavorful and delicious.  And realllllly not that bad for you.  How amazing is that?

Ingredients
  • 2 chicken breasts {frozen is fine}
  • 1 - 15 oz can black beans, drained
  • 1 - 15 oz can pinto beans, drained
  • 1 - 14 oz can diced tomatoes, drained
  • 1 - 15 oz can sweet corn, drained
  • 1 - 10 oz can cream of chicken soup
  • 1 - 14 oz can chicken broth
  • 1½ cups green enchilada sauce
  • 1 packet taco seasoning
  • 1 flour tortilla
  • 1 cup Mexican cheese blend, plus more to top
Instructions
  1. Place chicken breasts in the slow cooker.
  2. Pour all of the cans of ingredients, plus the taco seasoning, on top, and stir to combine.
  3. Turn the slow cooker to low and cook for 8 - 10 hours.
  4. Come back and shred the chicken with two forks.
  5. Tear a tortilla into bite sized pieces and add it to the soup.
  6. Also add 1 cup of cheese.
  7. Stir in and cook for an additional 30 minutes to an hour.
  8. Serve hot and top with cheese.

  1. OMG. This recipe is SO EASY! And tastes like you spent hours in the kitchen. I used a can of green chile enchilada sauce and one large can of white chunk chicken (strained) instead of cooking the chicken breasts, making this the 8 can soup other commenters are talking about. I would also use tortilla strips for soups/salads instead of the tortilla, Makes the soup salty/crunchy. It is SO GOOD!
