Slow Cooker Honey Balsamic Chicken and Avocado Sliders

Seriously people, this one was too easy.  I’m mentally filing it in the *make this again when we’re having 304983 people over for the football game* pile because it was quick, easy, hearty and delish.

It was like something that you get at a bbq joint, except at home.  And ready when you get back from work.  And I put avocado on top which made it more awesome.

Slow Cooker Honey Balsamic Pulled Chicken and Avocado Sliders

Ingredients
  • 3 boneless, skinless chicken breasts
  • ½ of a red onion, chopped
  • 1 green bell pepper, chopped
  • ½ cup chicken broth
  • 1 cup balsamic vinegar
  • ¾ cup ketchup
  • 4 T brown sugar
  • ¼ cup honey
  • 1 t Worcestershire
  • 1 t Dijon mustard
  • 1 t preminced garlic
  • 1 t thyme
  • 1 t rosemary
  • ½ t black pepper
  • ½ t salt
  • 1 avocado, peeled, cored and sliced
  • Hawaiian sweet rolls, cut in half
Instructions
  1. Put everything except for the sweet rolls in the slow cooker and stir to combine. Make sure the chicken breasts are sitting in the liquid.
  2. Turn the slow cooker to low and cook for 6-8 hours.
  3. Shred the chicken with two forks and let cook for another 30 minutes.
  4. Use a slotted spoon to scoop chicken mixture onto the sweet rolls and top with sliced avocado.
