Baked Salmon with Chunky Guacamole & Cilantro Lime Rice












I am a huge fan of salmon.
I didn’t start eating any type of seafood, including fish, until I met Hubby and went to meet his family in the Pacific Northwest
And when his sweet uncle offered me a big piece of salmon and a bowl of cioppino, I wasn’t going to say no
{mostly because I didn’t want to be that picky girlfriend character in front of the fam}
And I tried it.  And it was delicious.  And I’ve been eating seafood like a champ from that day forward.  And now I actually crave salmon.  I can’t get enough of the stuff

So with this one, I decided to combine my love affair with salmon with my love affair with one of the worlds’ greatest foods
I mean, is there anything in the world that is better than guacamole?
I especially like this chunky, flavorful, colorful guacamole, and {lets not lie} I may have eaten a bunch of it with chips in the name of “testing it” to make sure it was good.  It was very good.

Spicy Baked Salmon with Chunky Guacamole & Cilantro Lime Rice

  • For salmon:
  • 2 lbs salmon
  • 1 t lime juice
  • 1.5 t chili powder
  • 1 T ground cumin
  • 1 t onion powder
  • 1 t garlic powder
  • 1 t salt
  • 1 t black pepper
  • For guac:
  • 2 avocados, peeled, seeded and sliced
  • 1 small red onion, sliced
  • 1 jalapeno pepper, sliced into small pieces
  • 1 red bell pepper, sliced
  • 1 tomato, sliced
  • ½ cup cilantro, chopped
  • 1 T lime juice
  • 1 t garlic powder
  • Salt & pepper to taste
  • For cilantro lime rice:
  • 2 cups cooked white rice
  • 1 T lime juice
  • ⅓ cup cilantro, chopped
  • Salt & pepper to taste
  1. Preheat the oven to 350 degrees
  2. Spray a pyrex with nonstick cooking spray and lay your salmon in it. Pour lime juice on top.
  3. In a small bowl, combine chili powder, cumin, onion powder, garlic powder, salt and pepper and mix to form a rub.
  4. Pour the rub over the salmon and press in gently.
  5. Put the salmon in the oven and let it cook for 25 minutes.
  6. Set your rice on to cook while you chop your veggies.
  7. While the salmon is cooking, chop up the avocados, onion, jalapeno, bell pepper, tomato and cilantro and mix them together in a bowl. Add lime juice, garlic powder, and salt & pepper and stir to combine.
  8. When rice is ready, add lime juice, cilantro, salt and pepper and stir to combine. It takes just like good!
  9. Now, once everything is done, it's time to plate. Put down a blanket of rice, then a piece or two of salmon, and top with guacamole. If there's extra guac, grab some chips and dig in!
