Slow Cooker Balsamic Beef & Onions

I want to start off by listing some of my most popular and most favorite recipes from my personal blog.  It is completely appropriate for me to start with a tip of the hat to my slow cooker, with this truly delicious and totally easy Balsamic Beef & Onions.

My crock pot is quite possibly my favorite of all of my kitchen tools.  I’m at work for at least nine hours a day, and there’s nothing better than getting home to the delicious smells of a fully cooked meal.

 

Slow Cooker Balsamic Beef & Onions

Ingredients
  • 2 beef tenderloin steaks (you can also use boneless chuck roast but we had these frozen in our freezer)
  • 1 tablespoon steak rub
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • ¼ cup water (optional)
  • 1 large white onions
  • 1 can beef broth
  • ½ cup balsamic vinegar
  • 1 can tomato sauce
Instructions
  1. Peel and slice up your onion and throw them in the bottom of your pot
  2. Throw your beef on top and drizzle with olive oil.
  3. If they're not frozen like mine, you can rub them with the steak rub and black pepper. I poured it over the top and rubbed it gently to make it stick and much as possible.
  4. Pour in your beef broth, balsamic vinegar and tomato sauce on the side of the pot and mix everything up.
  5. If your steaks aren't sitting in the liquid yet, try to move things around so they're still on the onions but not on the bottom of the crock pot. If it's not working, pour in the water so that they're in a little bath.
  6. Turn your dial to low and head to work. Come back in 8-10 hours and pull it out of the crock pot.
  7. Pull it out and serve immediately. I roasted some zucchini and squash and poured the juice over the top for some additional veggies.
